3-MCPD (3-monochloropropane-1,2-diol), 2-MCPD (2-monochloropropane-1,2-diol) and glycidyl esters are food processing contaminants formed during refining as reaction products of triacyl glycerols, phospholipids or glycerol and hydrochloric acid. The contaminants can occur in free form or in the form of fatty acids. 
Various health implications are reported with 3-MCPD, 2-MCPD and their esters which raise the need to control their levels in foods. In particular, palm oil naturally contains high levels of diglycerides and is for that reason prone to higher levels of 2- and 3-MCPD esters. The wide application of palm oil in the food industry, including baby food, and the EFSA set low maximum residue levels (MRL) demand a continuous control of food products for MCPD contaminations.
